蒸是烹饪方法的一种。指把食材放于蒸笼等器皿,置入注水的蒸具如镬,利用热力把水加热成蒸汽,以蒸汽加热烹熟食材的过程。中国菜以蒸来烹调的食品以肉类、鱼类及蛋类为主,蒸豆腐亦很常见,根据食品原料的不同,可分为猛火蒸,中火蒸和慢火蒸三种。相对而言,西方惯作蒸素菜类而很少作蒸肉类菜色。
