表面活性剂（又称界面活性剂、乳化剂）是能使目标溶液表面张力显着下降的物质，可降低两种液体或液体-固体间的表面张力。表面活性剂一般为具有亲水与疏水基团的有机两性分子，可溶于有机溶液和水溶液。表面活性剂在溶液中的浓度超过某一临界值后，会自发缔合形成胶束（micelle）。胶束开始明显形成时的浓度称为临界胶束浓度（CMC），是表面活性剂的重要参数。
